Cheaters chocolate Ice cream about 4 servings. This is a summer treat that can be made ahead of time and presented in the heat of the after noon to those sitting out on your balcony
This is a no churn ice cream. If you already have something to churn ice cream in then never mind. But most if not all do not so here goes.
Chill until ice cold just below freezing, and then whip franticly.
1 cup of evaporated milk and hold to the side
6 tablespoons of cocoa or 1 ½ oz of melted unsweetened chocolate
6 tablespoons of white sugar
½ teaspoon of salt
Cook the above in a double boiler but not in boiling water until the mixture is smooth then add and stir in until melted ½ lb of the marshmallows you made from my other blog. Cool this mixture to room temp. Whip the ice cold milk until it becomes thick and fold it in to the other stuff you have cooling. Cover this and place in the refrigerator until set.
Cheaters Vanilla ice cream (makes about 9 servings)
Soak 2 teaspoons of gelatine in ¼ cup of cold water.
Scald over low heat but don’t boil
½ cup of milk with the seeds scrapped from a 2 inch vanilla bean
Stir in until dissolved
½ cup sugar and 1/8 teaspoon of salt
Stir in the soaked gelatine well and place this into the fridge and chill well. After it has chilled whip with a wire whisk (or an electric mixer) until it becomes thick but not stiff
Whip 3 cups of whipping cream to soft peaks and blend this in to the mixture and place into the fridge to set.
